Barb's West Coast Omelette

Ingredients:

1 Tablespoon Butter
1 Clove finely minced Garlic (optional)
2 Eggs
½ - ¾ Cup Grated Aged Cheddar Cheese
½ Cup Cooked Small Shrimp
½ Cup Canned or Fresh Cooked Asparagus Tips
¼ - ⅓ Cup Chunky Medium Hot Salsa Sauce
Dash of fresh chopped or dried Basil
Tabasco Sauce to taste
Salt and Pepper to taste

Preparation:  * Fresh ingredients are recommended.  Note that canned asparagus usually contains salt.  Season to taste accordingly.

Melt butter and gently brown garlic in frying pan over Medium Heat.  Break open the eggs and beat in a small bowl with a fork until they are well combined as a smooth liquid texture.  Pour eggs into heated frying pan, cooking like a pancake, and carefully flip over when firm enough to do so.  Spread the grated cheddar cheese, shrimp, asparagus, salsa sauce and basil over one half of the cooking eggs and immediately fold over the other half of the eggs to form a closed half circle pocket.  Cook for at least one minute and flip over omelette, cooking another minute or until cheese is melted.  Add tabasco sauce to taste and serve immediately.  Serves one.
